James Grivas – Executive Chef/Owner
A native of New York City, James Grivas was born into a large, tight knit Greek Family with a love for delicious food. A restaurant family, James was surrounded at a young age by cultural delicacies further enhanced by New York’s epic food melting pot. In pursuit of his dream to one day own his own restaurant, James honed his skills and flexed his creativity within kitchens in New York City and across Long Island. On his culinary journey, James worked in fast paced Manhattan restaurants. In the Fall of 2014, at the request of friends and family, James and partner Michael O’Neill, launched Pauleen’s Cuisine in Loudoun County. During that time they have been building a huge following in private home catering, various local events and functions in addition to Pauleen’s mobile food venture. James’ ability to create inventive menus coupled with a highly developed palette has earned him accolades and praise within the restaurant community and today, Pauleen’s is the realization of a 35 year old dream.
Michael O’Neill – Chief Hospitality Specialist/Owner
Michael O’Neill is the quintessential NYC bartender and hospitality dynamo, with over 35 years in the bar and restaurant industries. A true service specialist, Michael understands the power of atmosphere and the importance of absolute guest comfort. As a bartender and bar service consultant, Michael has managed and consulted on the proper flow of some of New York’s most popular and profitable venues. In the Fall of 2014, at the request of friends and family, Michael and partner James Grivas launched Pauleen’s Cuisine in Loudoun County. During that time they have been building a huge following in private home catering, various events and functions in addition to Pauleen’s mobile food venture. Michael’s emphatic attention to clients needs and detail has earned him the highest of accolades.
